7-Day Mediterranean Challenge

Welcome to the 7-Day Mediterranean Challenge!  Over the next 7 days, we will present 3 delicious and creative recipes each day to keep you happy and healthy!  In case you missed it, here is our recent blog post about the benefits of a mediterranean diet.  We hope you accept this challenge and have some fun while completing it!  

The suggested breakfasts will yield smaller amounts and be simple to prepare to avoid wasting any previous morning minutes.  The suggested lunch dishes are on the lighter side and can be kept for leftovers, but some will be best to eat the day of.  We chose most of the dinners so that they would be easy and delicious leftovers that you could use throughout the week.

Start Day 1 off right! This simple omelet has the perfect Mediterranean twist by adding spinach, feta, and oregano.  Note that it can be made with eggs or egg whites, depending on your preferences. Ingredients:

  • 4 large eggs (or 8 egg whites)
  • 2 large handfuls of spinach
  • 1 tablespoon Kosterina EVOO
  • 2 ounces of feta cheese, crumbled
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

This is your traditional go-to Greek salad. It's great for a quick, simple lunch that is always flavorful and satisfying. Ingredients:

  • 2 medium vine-ripened tomatoes, cut into 1 1⁄2" pieces
  • 1 small cucumber, peeled, halved lengthwise, and sliced crosswise into 1⁄4" pieces
  • 1⁄2 medium white onion, thinly sliced
  • 3 tbsp. Kosterina olive oil
  • 1⁄8 tsp. dried oregano, plus more
  • Kosher salt and freshly ground black pepper, to taste
  • 6 oz. feta, cut into thick slabs
  • 8 kalamata olives

Spicy baked greek shrimp

This baked shrimp dish will warm you up on even the coldest nights.  Boiling the tomatoes may seem like an unnecessary step, but if you have the time, I’d highly recommend doing it.  When baked, the already boiled tomatoes will produce a richer flavor that will carry over to the other ingredients of the dish as well.  Ingredients:

  •  Extra-virgin olive oil
  • 3 large shallots, diced
  • 4 garlic cloves, minced or pressed
  •  Salt and black pepper
