Day 2: Hard Boiled Eggs on Whole Wheat Bread with Olive Oil

This breakfast takes little time to prepare, especially if you already have hard boiled eggs in your fridge to consume.  I always hard-boil 6-8 eggs at the beginning of the week because they make eating healthy on-the-go easy and efficient.  When preparing, I like to add olive oil right when I take a hot and toasty piece of bread out of the toaster.  That way, the oil soaks right in, creating a heavenly texture. 

 

INGREDIENTS (serves 2)

2 pieces of whole wheat bread

2 tablespoons Kosterina EVOO

3 hard boiled eggs, sliced

Salt and pepper to taste

 

INSTRUCTIONS

Toast the 2 slices of whole wheat bread.  When crispy, drizzle each piece of toast with 1 tablespoon of Kosterina EVOO.  Place half of the sliced eggs on one piece of toast and repeat with the remaining.  Sprinkle salt and pepper on top and serve!
