Day 3: Dakos salad
Everyone knows and loves traditional Greek salad — fresh tomatoes, cucumbers, onions, oregano and huge chunks of feta cheese — what’s not to love? But our favorite "Greek salad" in the Kosterina household is called Dakos salad. It’s a bread-based salad and is commonly served in southern Greece.
3 large ripe tomatoes
4 barley rusks (but you can also use dried whole wheat bread if the rusks are hard to come by)
5 tbsp crumbled feta cheese
2 tbsp ricotta cheese, or if you can get a hold of it, myzithra (optional)
10-15 Kalamata olives
2 tbsp capers
8 tbsp Kosterina EVOO
1/2 tsp red wine vinegar
Place the rusks or dried bread in a bowl and sprinkle with water to soften. Cut into 1/2 to 1 inch chunks. Chop tomatoes into 1 inch pieces and add to bowl. Add feta, myzithra, olives and capers. Add olive oil, vinegar and mix together. Top with oregano.
