Day 4: Simple Greek Scrambled Eggs
This quick scramble is a great way to start the day since it is heavy in protein and vegetables. Remember, you can purchase pre-chopped vegetables to save time. I do this often because it makes cooking quicker and cleaning easier (no cutting boards / knives to wash!). Any shortcuts that buy extra time are worth taking is our unofficial motto, or at least it should be!
INGREDIENTS (serves 1)
2 eggs, beaten
1 tablespoon Kosterina EVOO
3-4 tablespoons any color bell pepper, diced
3 tablespoons white onion, chopped
1 -2 tablespoon black olives, sliced
2 tablespoons feta cheese, crumbled
all purpose Greek seasoning, to taste
In a small bowl whisk the eggs together and add the pepper, onion and olives. Heat a small pan and add a tablespoon of Kosterina EVOO. When the pan is hot, add the eggs. While scrambling the eggs, season with greek seasoning and add the crumbled feta. You can add the feta later, but I like to add it while the eggs are cooking so that there are hidden melted feta crumbles. If you would like, serve with a piece of whole wheat toast.
