A nutritious, hearty, and delicious bowl perfect for the autumn season. A diverse set of fall flavours are brought together using our Original Extra Virgin Olive Oil and new Apple Cider Balsamic Vinegar. Enjoy!Ingredients
- 1 sweet potato, peeled and diced
- 1 cup brown rice
- 2 cups kale or spinach
- 1 apple, sliced thin
- ¼ cup dried cranberries or cherries
- ¼ cup feta crumbles
- ¼ cup slivered almonds
- ¼ to ½ cup cut protein of choice
- ½ cup Kosterina Apple Cider Balsamic vinegar
- ½ cup + 1 tablespoon Kosterina Extra Virgin Olive Oil
- 3 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 teaspoon kosher salt
- 1 teaspoon fresh cracked pepper
Directions
- Preheat oven to 400ºF
- Place sweet potato on a baking sheet and drizzle with 1 tablespoon of oil. Bake for 25 minutes until golden brown.
- While the sweet potato roasts, cook the rice according to package instructions.
- To assemble the bowl, lay the spinach on the bottom of the bowl. Portion the rice and spinach on top. Add the sweet potato, feta and almonds.
- In a mixing bowl, whisk the vinegar with the oil, mustard, honey, salt and pepper.
- Pour the dressing over the bowl and serve immediately.
