Ingredients

For the Pesto: 

  • 1 cup spinach leaves
  • 1 cup basil leaves
  • ¼ cup Kosterina Green Goddess Extra Virgin Olive Oil
  • 1 garlic clove 
  • 2 tbsp lemon juice 
  • ¼ cup walnuts 
  • ⅓ cup parmesan cheese 
  • 1/2 tsp salt 

For the Pasta: 

  • 12 oz gluten-free fusilli pasta 
  • 2 cups green cabbage, shredded
  • 1 cup zucchini, diced
  • 2 tbsp Kosterina Green Goddess Extra Virgin Olive Oil

Instructions

    Add all ingredients for the pesto into a blender. Blend until smooth.

    Cook the pasta in salted water according to the package directions. Drain and set aside.

    To a pan over medium heat, add the olive oil, cabbage, and zucchini and cook, stirring frequently, for 8 minutes. Remove from the heat and add the pasta and pesto to the pan. Stir to combine.
