This is the official Baked By Melissa x Kosterina Green Goddess salad recipe. Every bite is filled with a perfect combination of flavors and textures. The savory, creamy dressing comes together with a crunch of cabbage & cucumbers to make for the most delicious plant-based lunch.

Ingredients

For the salad

  • 1 small head green cabbage
  • 3-4 mini cucumbers (or 1 large cucumber)
  • 1/4 cup chives
  • 1 bunch scallions


For the dressing

  • 1/4 cup Kosterina x Baked by Melissa Green Goddess Olive Oil
  • Juice of 1½ lemons
  • 2 tablespoons rice vinegar
  • 1/4 cup raw, unsalted cashews
  • 1/3 cup nutritional yeast
  • 1 cup fresh spinach
  • 2 tablespoons fresh chives
  • 1 teaspoon salt

Instructions

    Finely chop the cabbage and cucumbers into ⅛”-size pieces and add to a large bowl. Chop the chives and scallions and add them to the bowl.

    Add the dressing ingredients to a blender in the order listed, then blend on high until completely smooth. No green flecks should remain.

    Pour the dressing over the salad and mix well to evenly coat. Serve with your favorite tortilla chips
