Pre-heat oven to 350 degrees. Add Walnuts, Pistachios, and Almonds to a baking sheet and toast in the oven for 8-10 minutes until fragrant. Let cool for 5 minutes.

Add toasted nuts, lemon zest, EVOO, Sugar, Cinnamon, Salt, and Vanilla to a food processor and pulse to chop.

Add mini filo cups to a mini muffin tin. Fill each filo cup with 1 teaspoon of mixture from the food processor. Bake for 10 minutes.

While those are baking, in a saucepan on medium-low heat add in water, honey, and sugar. Turn heat to a simmer and stir every few minutes until combined and thickened, about 10 minutes.

Pour 1 teaspoon of mixture into each cup and let it soak in. Pour another teaspoon into each cup and then chill in the fridge for at least 5 hours or overnight before serving.
