Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

Carefully using a fork, poke each Sweet Potato 4-5 times. Microwave or Airfry the Sweet Potatoes for 2-3 minutes to soften. Once cool enough to handle, cut each Sweet Potato in half lengthwise.

On the baking sheet lined with parchment paper, drizzle 1/2 Tablespoon of Kosterina Spicy EVOO per Sweat Potato then layer on top a sprig of Rosemary, salt, and pepper before laying the Sweet Potato open face down into the EVOO and Rosemary mixture.

Bake Sweet Potatoes for about 40 minutes. While Sweet Potatoes are baking, mix together dip ingredients and set aside in the fridge until potatoes are ready and cooled.

Let Sweet Potatoes cool for 10 minutes before enjoying with the Greek Yogurt Dill Dip.
