Made perfectly-sweet, these pancakes will become your new go-to pancake recipe. Between the soft, bouncy texture of the cakes and the crisp crunch of chocolate sea salt granola, experience everything you want in each bite. Topped with almond butter & blueberries, your entire family will never want breakfast to end. Suddenly, waking up became easy!

Ingredients

  • 1 egg
  • 1 tbsp almond milk or oat milk
  • 1 tsp vanilla extract 
  • 4 tsp Kosterina Everyday Olive Oil, divided
  • ½ cup gluten-free pancake mix
  • ¼ cup fresh blueberries
  • ¼ cup Lil Bucks Chocolate Sea Salt Clusterbucks granola clusters
  • Almond butter, blueberries, and Lil Bucks Chocolate Sea Salt Clusterbucks granola for topping

Instructions

    To a medium bowl, add the egg, milk, vanilla, and 2 tsp Kosterina Everyday Olive Oil and whisk well. Add the pancake mix and blend until completely combined.

    Add the remaining 2 tsp Kosterina Everyday Olive Oil to a pan and bring to medium heat. Place a small scoop of the pancake batter into the skillet and add a few blueberries and a sprinkle of Lil Bucks Chocolate Sea Salt Clusterbucks granola to the pancake. Once the edges are set, flip and cook until golden brown. Repeat with the remaining batter.

    Before serving, top the pancakes with a drizzle of almond butter, blueberries, and Lil Bucks Chocolate Sea Salt Clusterbucks granola.
