Crudité with Feta Dill Dip
Ingredients
For the Raw Crudite:
- 1 cup carrots
- 1 cup persian cucumbers, sliced
- 1 cup mini bell peppers
- 1 cup radish, thinly sliced
- 1 cup haricot verts
For the Other Garnishes:
- Grapes
- Figs, halves
- 1 cup Kosterina Greek Herb Kalamata Olives
- 1 cup raw almonds
- 1 cup store bought stuffed grape leaves
- Feta Cheese
For the Feta & Dill Dip:
- 1 cup full fat greek yogurt
- 3 oz feta cheese
- 1 tsp lemon juice
- 1 tsp lemon zest
- 1 garlic, grated
- ¼ cup Kosterina Original Extra Virgin Olive Oil
- Salt and Pepper
- 1 Tsp Fresh Dill, chopped
Directions
For the Raw Crudite:
- Arrange all raw crudité and garnishes on board and serve.
For the Feta & Dill Dip:
- Blend first 7 ingredients in vitamix or food processor until smooth. Finish by folding in fresh dill and serve immediately.
