To make the cucumber juice, add the chopped cucumber to a blender. Blend until smooth, adding a splash of water if needed to thin out the mixture. Strain the juice through a mesh sieve and set aside.

To a shaker, add ice, tequila, triple sec, Kosterina Cucumber Lemon Balsamic Vinegar, fresh lemon juice, and 1 oz of the cucumber juice. Shake well until combined.

Pour salt and a sprinkle of lemon zest onto a small plate and rim a glass with the lemon salt.

Fill the glass with ice and pour the margarita mixture on top. Garnish with cucumber slices.
