Everyone knows and loves traditional Greek salad — fresh tomatoes, cucumbers, onions, oregano and huge chunks of feta cheese — what’s not to love? But our favorite "Greek salad" in the Kosterina household is called Dakos salad. It’s a bread-based salad and is commonly served in southern Greece.Ingredients
- 3 large ripe tomatoes
- 4 barley rusks (but you can also use dried whole wheat bread if the rusks are hard to come by)
- 5 tbsp crumbled feta cheese
- 2 tbsp ricotta cheese, or if you can get a hold of it, myzithra (optional)
- 10-15 Kosterina Greek Herb Kalamata olives
- 2 tbsp capers
- 8 tbsp Kosterina Original Extra Virgin Olive Oil
- 1/2 tsp red wine vinegar
- Oregano
Directions
- Place the rusks or dried bread in a bowl and sprinkle with water to soften.
- Cut into 1/2 to 1 inch chunks. Chop tomatoes into 1 inch pieces and add to bowl.
- Add feta, myzithra, olives and capers.
- Add Kosterina Original Extra Virgin Olive Oil, vinegar and mix together.
- Top with oregano.
