Ingredients

  • 1 ½ cups 1:1 gluten-free all purpose flour blend
  • 1 cup yellow cornmeal 
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt 
  • 1 cup A2 Milk Grass Fed Whole Milk
  • ¾ cup frozen corn kernels, thawed
  • 2 large eggs
  • ¼ cup honey
  • ¼ cup Kosterina Everyday Olive Oil
  • Extra honey for the glaze (optional)

Instructions

    Preheat oven to 400 and grease a 8x8 inch baking pan with olive oil.

    In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.

    In a separate bowl, whisk together the milk, corn, eggs, honey, and Kosterina Everyday Olive Oil.

    Add the wet mixture to the dry mixture and mix well to combine. Pour the batter into the greased pan.

    Bake for 25 minutes and let cool. Brush the top with honey (optional) before serving.
