Ingredients

Dressing

  • 1 cup full-fat Greek yogurt
  • ½ cucumber, grated
  • 2 tbsp Kosterina Original EVOO
  • 1 tbsp Kosterina Cucumber Lemon Balsamic Vinegar
  • 2 tbsp freshly chopped dill
  • 2 garlic cloves, pressed or minced
  • Salt and pepper

Filling

  • 1 pound chicken breast, cooked and finely chopped
  • ⅓ cup finely diced red onion
  • ½ jar Kosterina Kalamata Olives, chopped
  • 1 cup cooked chickpeas

Instructions

    Whisk together the yogurt, cucumber, EVOO, balsamic, dill, garlic, and a generous pinch of salt and pepper. Taste and add more salt as needed.

    In a separate large mixing bowl, add the chicken, red onion, olives, and chickpeas. Pour the dressing over the top and mix thoroughly.

    Cover and refrigerate for at least 1-2 hours before serving. Serve in a pita, lettuce wraps, with crackers, etc. Enjoy!
