A Greek household staple, we decided to add a couple of twists to make this traditional favorite even tastier. Using our robust Original EVOO and Greek Herb Kalamata Olives, you will be surprised by how much flavor a simple Orzo Salad can hold! A bright salad dressings comes together with a series of fresh vegetables, creating a delicious blend of flavors and textures.

Ingredients

For the Salad: 

  • 2 cups orzo, cooked 
  • 1 cucumber, peeled and diced
  • 1/2 cup red onion, diced
  • 1 pint grape tomatoes, halved
  • 15 oz can chickpeas, drained and rinsed 
  • 2 tsp fresh dill, finely chopped
  • 6 oz Kosterina Greek Herb Kalamata olives, rinsed and drained
  • 8 oz feta cheese, crumbled 

For the Dressing: 

  • ½ cup Kosterina Original Extra Virgin Olive Oil
  • ¼ cup red wine vinegar
  • 2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp kosher salt 
  • ⅛ tsp ground black pepper

Instructions

    Cook the orzo in water according to the package directions. Drain and add to a large bowl. Set aside.

    To a jar or small bowl, add all of the ingredients for the dressing and whisk well to combine.

    To the bowl of orzo, add the cucumber, red onion, tomatoes, chickpeas, dill, olives, and feta. Add the dressing and toss to coat. Refrigerate until ready to serve.
