Ingredients

  • 1 lb shrimp, peeled, deveined
  • ¼ cup Kosterina Organic Everyday Extra Virgin Olive Oil
  • 3 tablespoons Kosterina Original Extra Virgin Olive Oil
  • 2 Persian cucumbers, sliced
  • 1 cup radishes, sliced
  • ½ cup Kosterina Greek Herb Kalamata Olives
  • ¼ parsley, chopped, plus more for garnish
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • ½ teaspoon cumin, ground
  • ½ teaspoon cayenne
  • ½ teaspoon onion powder
  • Salt & freshly ground pepper, to taste

Instructions

    In a large pan, sear shrimp in 3 tablespoons Kosterina Organic Everyday Extra Virgin Olive Oil until cooked through, 5-6 mins. Season with salt & pepper. Cool & chop.

    In a large bowl, mix seared shrimp, cucumbers, radishes, olives, parsley, lemon zest & juice, cumin, cayenne, onion powder & 3 tablespoons Kosterina Original Extra Virgin Olive Oil.
