Ingredients

For the Chicken: 

  • 2 Tablespoons Kosterina Garlic Olive Oil
  • 1 pound ground chicken or turkey
  • ½ cup salted peanuts, finely chopped 
  • 4 green onions, sliced 

For the Peanut Sauce: 

  • ¼ cup low-sodium soy sauce or coconut aminos 
  • ½ cup creamy peanut butter 
  • 1 lime, juiced
  • 2 teaspoons chili garlic paste 
  • 1 tbsp coconut sugar 
  • ½ tsp ground ginger 
  • ¼ cup filtered water

For the Wraps:

  • 2 heads butter lettuce, washed and leaves removed
  • Lime juice, cilantro, and extra Kosterina Garlic Olive Oil for serving

Instructions

    To make the sauce, combine the soy sauce or coconut aminos, peanut butter, lime juice, chili garlic paste, coconut sugar, ginger, and water in a small bowl and stir until smooth.

    To a saucepan over medium heat, add the Kosterina Garlic Olive Oil and ground chicken. Saute for about 6 minutes until the chicken is cooked through, then add the peanuts and green onions and cook for 3 more minutes. Add about half of the sauce mixture to coat the chicken, then remove from the heat and set aside.

    To assemble the wraps, add a scoop of chicken to each lettuce leaf. Drizzle with the remaining sauce, a squeeze of fresh lime juice, chopped cilantro, and a drizzle of Kosterina Garlic Olive Oil.
