We joined forces with Chike and their Protein Iced Coffee powder to create a satisfying, healthy treat. Paired with our Blueberry Crushed Fruit Vinegar, this recipe is bursting with a bright, fruity flavor. Plus, it's gluten free and made with only natural sweeteners!

Ingredients

  • 1 1/4 cup of gluten-free self-raising flour
  • 2 scoops of Chike Sweet Cream Iced Coffee
  • 2/3 of granulated monk fruit
  • 3 eggs
  • 3 small bananas
  • 2 tbsp of Kosterina Crushed Blueberry Vinegar
  • 2 tsp of vanilla extract
  • 1/4 cup of vanilla greek yogurt
  • 1/4 cup of Kosterina Extra Virgin Olive Oil
  • 1 cup of blueberries

Instructions

    Preheat the oven at 350F.

    Mix all dry ingredients in a bowl.

    Place the bananas in a bowl and microwave for 1:30 minutes.

    Add the eggs, vanilla extract, blueberry vinegar, olive oil, bananas and mix well with the dry ingredients.

    Fold in the in the blueberries.

    Transfer the batter into 12 silicone muffin cups.

    Bake for 30-32 minutes and let them cool down.
