We were super excited when we found Monty’s delicious plant-based products. Monty’s amazing flavors and texture rival any dairy product's and have become our go-to spreads. With cherry season in full bloom, our Executive Chef, Anna Gass, created a summery vegan pizza that’s fresh, colorful and so tasty! The mix of peppery arugula, a sweet balsamic drizzle, fresh cherries, and Monty's best-selling Everything Cream Cheese (made from cashews, live cultures, sea salt, onions, garlic, poppy seeds, and sesame seeds) creates a delicious combination of flavors that we can't wait for you to try.Ingredients
For the Pizza Dough:
- 3 cups all-purpose or bread flour, plus more for dusting
- 2 1/2 teaspoons, instant yeast
- 2 1/2 teaspoons, kosher salt
- 2 tablespoons, Kosterina Organic Everyday Extra Virgin Olive Oil
For the Toppings:
- 3 tablespoons, Kosterina Original Extra Virgin Olive Oil
- 3 tablespoons, your favorite Everything Bagel seasoning
- 1 jar (6 oz.) Monty’s Everything Plant-Based Cream Cheese
- 3 cups, baby arugula
- 2 cups, fresh cherries, pitted and halved
- ½ cup, toasted and slivered almonds
- 2 tablespoons, Kosterina Fig Balsamic Vinegar
- 1 teaspoon, kosher salt
- 1 teaspoon, fresh cracked pepper
Directions
For the Pizza Dough:
- Combine the flour, yeast, oil and salt in a food processor. Turn the machine on and add 1 cup of water.
- With the machine running slowly add 1/2 cup of water, a little at a time, until the mixture forms a ball and is slightly sticky to the touch.
- Turn the dough onto a floured bowl and knead by hand to form a smooth dough ball.
- Put the dough in a bowl and cover with plastic wrap; let rise for one hour.
For the Toppings:
- Preheat the oven to 350 degrees F.
- Once the dough rises, spread pizza dough on a 9” x 13” baking sheet.
- Pour Kosterina Organic Everyday Extra Virgin Olive Oil and sprinkle the Everything Bagel seasoning evenly over the dough.
- Using a fork, prick the dough all over to prevent rising and bake for 20-25 minutes, until cooked through and golden brown.
- Remove from the oven and allow to cool for 10 minutes.
- Spread Monty’s Everything Plant-Based Cream Cheese evenly over the baked pizza crust and evenly cover with arugula, cherries and almonds.
- In a small bowl, whisk Kosterina’s Original Extra Virgin Olive Oil & Fig Balsamic Vinegar, salt and pepper until combined and drizzle over the pizza.
- Serve immediately--and enjoy!
