  • 1 cup almond flour
  • ⅓ cup vanilla protein powder
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 pasture-raised eggs
  • 3/4 cup unsweetened almond milk
  • 1.5 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp Kosterina Organic Everyday EVOO
  • 1 tsp vanilla extract
  • Kosterina Organic Everyday EVOO for cooking

Instructions

    In a bowl, whisk together the almond flour, protein powder, poppy seeds, baking powder, and salt. In another bowl, whisk the eggs, almond milk, lemon juice, lemon zest, Kosterina Everyday Organic EVOO, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until smooth.

    Heat a non-stick skillet over medium heat and lightly grease with Kosterina Organic Everyday EVOO. Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2 to 3 minutes, until bubbles form on the surface. Flip and cook for another 1 to 2 minutes, until golden brown.

    Serve warm with extra lemon zest and a drizzle of honey or maple syrup if desired.
