Preheat the oven to 350 F and line a muffin tin with liners.

Whisk together the eggs, Kosterina olive oil, sugar, vanilla, and almond milk in a large mixing bowl.

Whisk in the gluten free all purpose flour, almond flour, baking powder, baking soda, matcha, and salt until completely combined.

Scoop the batter into the muffin trays, dividing evenly, then sprinkle the tops of each with Matchaful granola.

Bake for 20-24 minutes or until a toothpick comes out clean.
