Ingredients

  • 2 eggs
  • 1/3 cup Kosterina Everyday Extra Virgin Olive Oil  
  • 1/2 cup coconut sugar 
  • 2 tsp vanilla extract
  • 3/4 cup almond milk 
  • 1 1/4 cups gluten free all purpose flour (or regular all purpose flour)
  • 1 cup almond flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 4 tsp matcha
  • 1/4 tsp salt
  • 3/4 cup Matchaful Original Grain-Free Granola

Instructions

    Preheat the oven to 350 F and line a muffin tin with liners.

    Whisk together the eggs, Kosterina olive oil, sugar, vanilla, and almond milk in a large mixing bowl.

    Whisk in the gluten free all purpose flour, almond flour, baking powder, baking soda, matcha, and salt until completely combined.

    Scoop the batter into the muffin trays, dividing evenly, then sprinkle the tops of each with Matchaful granola.

    Bake for 20-24 minutes or until a toothpick comes out clean.

    Let cool for about 10 minutes before serving.
