This is a great Passover lunch or brunch idea, especially when your standard Matzo recipes are starting to feel a bit boring. Cheesy matzo flatbread is covered our Coriander and Pink Pepper Green Olives, sun dried tomatoes, red onion, and other delicious Mediterranean ingredients. When it comes to this recipe, the quality of your ingredients are definitely important, as this recipe is simple enough to let each of them shine.

Ingredients

  • 2 Matzo Squares
  • 2-3 tablespoons pesto (optional)
  • 1/2 cup shredded cheese
  • 1/2 red onion
  • 1/2 cup marinated artichokes
  • 1/2 cup Kosterina Coriander & Pink Pepper Green Olives
  • 1/4 cup crumbled feta cheese
  • 2 teaspoons capers
  • Fresh herbs (such as parsley or basil) to taste

    Preheat oven to 350ºF.

    Spread the pesto over each matzo. Sprinkle half of the shredded cheese over each matzo. Spread the rest of the ingredients over each, saving some fresh herbs for garnish.

    Bake for 10-15 minutes at 350ºF, or until the shredded cheese melts and the edges of the matzo turn golden brown.

    Remove from heat, garnish with fresh herbs, and gently break the matzo into halves or quarters for serving.
