We love carrot cake, but more often than not, we find it to be slightly too sweet for our liking. We joined forces with our friends at Nounos to make this carrot cake that's not-too-sweet, but has all of the warm flavors that we love. Plus, it's gluten-free and made with healthy, whole ingredients!

Organic Everyday Extra Virgin Olive Oil

Ingredients

For Carrot Cake:

  • 3 Ripe bananas
  • 1 Teaspoon of Kosterina Everyday EVOO
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Maple Syrup
  • 2 Cup of Rolled Oats
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Cinnamon
  • 1 Cup of Shredded Carrots (roughly chopped if store-bought)
  • 1/4 Cup Chopped Walnuts
  • Pinch of Salt

For Frosting:

  • 1 Cup of Nounos Vanilla Greek Yogurt
  • 1 Teaspoon of Maple Syrup
  • 1/8 Teaspoon of Cinnamon

Instructions

    In a Blender, combine all ingredients expect for Carrots and Walnuts. Blend until all ingredients are combined. Once blended, fold in Carrots and Walnuts.

    In a parchment lined 8 by 4 Bread Pan, pour in Carrot Cake mixture. Bake at 350 for 35 minutes. Remove from oven and let cool.

    While Carrot Cake is cooling, make the frosting. Combine all ingredients in a bowl and whisk together.

    Once Carrot Cake is cooled, top with Yogurt Frosting and serve.

    Optional: top with more chopped Walnuts
