Ingredients

  • 2 tbsp Kosterina Everyday Olive Oil 
  • 1 onion, chopped 
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced 
  • 4 cups vegetable broth 
  • 1 ½ cups green lentils
  • 1 15 oz can diced tomatoes 
  • 2 tsp fresh thyme, minced 
  • 2 tbsp fresh parsley, minced
  • 1 tsp kosher salt
  • 2 cups kale, thinly sliced 
  • 3 tbsp fresh lemon juice 
  • 2 tbsp Kosterina Garlic Olive Oil 
  • Parmesan cheese for serving (optional)

Instructions

    To a large pot over medium heat, add the Kosterina Everyday Olive Oil. Add the onion, celery, and carrots and saute until softened, about 6 minutes. Add the minced garlic and cook for about 30 seconds, stirring frequently.

    Add the broth, green lentils, tomatoes, thyme, parsley, and salt and bring to a boil. Cover and reduce heat to medium-low. Let the soup cook for about 20 minutes, or until the lentils are soft.

    Stir in the kale and cook for about 5 minutes. Turn off the heat and add lemon juice and Kosterina Garlic Olive Oil, mixing well to combine.

    Top with parmesan cheese before serving, if desired.
