This juicy, tender chicken is bursting with Mediterranean flavor. A bright, citrusy sauce comes together with dijon mustard, lemon juice, and our Greektown Spice Blend to create a medley of flavors that you will want on everything. These chicken thighs are tender to the bone.

Ingredients

  • ⅓ cup Kosterina Everyday Extra Virgin Olive Oil 
  • ½ cup fresh lemon juice 
  • 6 garlic cloves, minced
  • 1 teaspoon dijon mustard
  • 2 tsp The Spice House Greektown Spice 
  • ½ tsp kosher salt 
  • 1 ½ pounds boneless skinless chicken thighs
  • 1 lemon, sliced 
  • 1 yellow onion, sliced 
  • Fresh dill and parsley for garnish

    Preheat the oven to 425 F.

    To a large bowl, add the Kosterina Everyday Extra Virgin Olive Oil, lemon juice, garlic, dijon, Greektown Spice, and kosher salt. Mix well to combine, then add the chicken to the marinade and toss to coat.

    Once the oven is preheated, add the marinated chicken, lemon, and onion to a large sheet pan in an even layer. Drizzle the remaining marinade over the lemon and onion.

    Bake for 20 minutes or until the chicken is fully cooked. Remove and let cool slightly. Garnish with fresh dill and parsley before serving.
