This easy recipes brings together the flavors of fresh vegetables, high-protein cottage cheese & ground turkey, with a drizzle of our Spicy Red Pepper Olive Oil. But the real game-changer? Ingredients

Cottage Cheese: 

  • 1 cup cottage cheese (we recommend Good Culture brand)
  • 2 1/2 tbsp Kosterina Spicy Red Pepper Olive Oil
  • 2 tbsp fresh dill, finely chopped 
  • 2 tbsp fresh chives, finely chopped
  • 2 tbsp lemon juice, divided 
  • 1/4 tsp salt

Vegetables: 

  • 1/2 cup cucumbers, chopped 
  • 1/2 cup cherry tomatoes, halved 
  • 1/4 cup sliced red onion 
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/4 tsp salt 

Bowl:

  • 2 eggs 
  • 1 tbsp Kosterina Spicy Red Pepper Olive Oil
  • 1/2 cup ground turkey, fully cooked and browned
  • Yellowbird Blue Agave Sriracha (for drizzling) 
  • Fresh chives for garnish

Instructions

    In a medium bowl, mix together the cottage cheese, olive oil, dill, chives, lemon juice, and salt. Set aside.

    In a small bowl, combine the cucumbers, cherry tomatoes, red onion, lemon juice, garlic, and salt. Mix together and set aside.

    To a frying pan over medium heat, add Kosterina Spicy Red Pepper Olive Oil and cook the eggs sunny-side-up.

    To assemble the bowls, divide the cottage cheese into two bowls and top with the vegetables, eggs and ground turkey. Top with a generous drizzle of Yellowbird Blue Agave Sriracha, and top with extra chives for garnish.
