The strawberries are truly the star of this recipe, balanced out by the sweet-tanginess of Kosterina Strawberry Crushed Fruit Vinegar, making this delicious pie not-too-sweet. For the The Pie:
- ½ Cup Water
- ⅓ Cup Kosterina Strawberry Crushed Fruit Vinegar
- 1 ¼ Cup Sugar
- 1.5 pounds Strawberries
- 6 Tablespoons Cornstarch
- 1 Pie Crust
For the Optional: Homemade Whipped Cream:
- 1 Pint Heavy Cream
- 4 Tablespoons Powdered Sugar (add more if needed)
Directions
For the The Pie:
- Bake Premade Pie Crust as instructed and let cool.
- Remove strawberry caps and cut each strawberry into 4. Put 1 cup of cut strawberries in a small bowl and put the remaining strawberries in a large bowl. Set aside the small bowl of strawberries.
- Take the large bowl of strawberries and mash them up. Mashed strawberries should make about 2 cups.
- In a pot on medium-low heat, add in Sugar, Cornstarch, Mashed Strawberries, Water, and Kosterina Strawberry Crushed Fruit Vinegar. Stir until sugar is melted. Bring mixture to a boil while stirring every few seconds. Remove from heat and let cool for 15-20 minutes. Once cool, fold in the remaining cup of fresh strawberries.
- Add cooled Strawberry mixture into baked Pie Crust. Let cool for 3 hours before serving.
For the Optional: Homemade Whipped Cream:
- Once Pie is cooled, make fresh whipped cream using Heavy Cream and Powdered sugar. Whip cream using a stand mixer or hand mixer until peaks can be formed.
