This recipe is perfect for a warm, Summer day. Crisp & refreshing tomatoes come together with a hint of garlic to accompany a creamy, smooth burrata. Plus, with the additional crunch of some pine nuts, the combination of textures is simply mouthwatering. Enjoy with some bread or your favorite crackers to bring this dish altogether.

Garlic Olive Oil

Ingredients

  • 3 Tablespoons of Kosterina Garlic Olive Oil
  • 1 Package of Heirloom Tomatoes (about 16 ounces)
  • 2 Balls of Burrata
  • 4-6 Large Basil Leaves
  • 3 Tablespoons of Pine Nuts, toasted
  • Bread for serving

Instructions

    Preheat oven to 375 degrees. Add tomatoes into a baking dish. Drizzle of Kosterina Garlic Olive Oil. Place in the oven and bake for 15-20 minutes until tomatoes begin to look blistered and a few start to pop.

    While Tomatoes are cooking, toast pine nuts in a nonstick pan on the stove. Toast on medium-low heat, constantly stirring until each side is toasted. About 5-7 minutes. Remove from stove and let cool.

    Once tomatoes are done, let sit for 5-10 minutes to cool. On a serving dish, prepare burrata. Tear each burrata ball into 2 or 4 pieces by ripping or cutting it in half. Cut each half again is desired. Layer blistered tomatoes on top of burrata and drizzle with any juice left in the pan.

    Cut your basil into strips by stacking each leaf on top of each other and then tightly roll the leaves together from from side to the other. Thinly slice the basil when it is rolled up to get shredded basil. Sprinkle Basil on top of Burrata and Tomatoes.
