Ingredients

  • ⅓ cup Kosterina Everyday Extra Virgin Olive Oil 
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 large egg
  • ½ tsp vanilla 
  • 1 tsp salt 
  • 1 ¼ cups gluten-free oat flour
  • ¼ tsp baking soda 
  • 1 ¼ cups Tuck Shop 70% Dark Chocolate, coarsely chopped 
  • Flaky sea salt for garnish 

Instructions

    Preheat the oven to 325 F and line a baking tray with parchment paper.

    To a medium bowl, add the Kosterina Everyday Extra Virgin Olive Oil, brown sugar, granulated sugar, egg, and vanilla. Whisk together until completely combined, then add the salt, flour, and baking soda and mix with a spatula. Add the chopped chocolate and stir to combine.

    Divide the dough into 8 pieces, roll into balls, and arrange on the baking tray.

    Bake the cookies for about 16 minutes or until the edges are set. Remove from the oven and let cool on the sheet pan. Sprinkle with flaky sea salt before serving.
